 At Devil’s Due Distillery, every pour tells the story of our region. We proudly follow a true grain-to-glass approach, meaning our spirits begin right here at home — with the hardworking local farmers who grow the grains we use. By sourcing corn and other ingredients from farms across WV, VA, MD & PA,  we ensure that every batch reflects the quality, flavor, and heritage of Appalachia. Once the grains arrive at our Stillhouse, our team carefully mills, mashes, ferments, distills, and bottles each spirit by hand. This dedication not only guarantees the freshest flavor in every sip but also strengthens the bond between our distillery and the community we love. When you raise a glass of Devil’s Due, you’re supporting local agriculture, family farms, and the timeless craft of distilling — from grain to glass. Devil's Due Distillery strives to represent the best of what West Virginia can offer. Fresh clean water naturally filtered through limestone, locally sourced fresh grains, and charred American white oak. What Devil's Due Distillery delivers is an experience for the customer that ties them back to the land. It is the local flavor of Appalachia derived from the air, earth and water that you just can't recreate elsewhere. At Devil's Due Distillery, we don't aim to make our fine Whiskey and spirits better, just different. The Story of Devil’s Due
Aging Whiskey is a tradition whose origins have no written history. In the case of Bourbon, its roots extend back even beyond America's birth. Tradition tells us that fine Corn Whiskey often flavored with a combination of Rye or Wheat and Malt Barley was poured into charred White American Oak barrels and left to sit for years. During this time, the strong alcohol pulls color from the char lending to it a deep auburn color. Deeper in the wood, Oak sugars, melted into rich caramels during the firing of the barrel, are slowly extracted to provide the Corn Whiskey with a signature Bourbon flavor. A White Oak Barrel, like the White Oak hull of our mighty American Sailing Ships of olde does not allow for the full penetration of liquids through the wood. This particular type of oak keeps ships afloat and Bourbon in place. ​
 
Yet a barrel once opened years later will never be as full as it once was. Over time, the barrel, while exceptional at containing its precious liquid cargo, will succumb nonetheless to it's atmospheric surroundings. While in liquid form the Bourbon remains sealed inside, temperature, pressure and humidity from it's surroundings will force evaporation of it's contents through the wood to the atmosphere. Each year of aging causes a loss, but one that is surly a benefit. As the barrel's contents reduce in volume the residual increases in flavor and color intensity. The "Angel's Share" as this process is known, is critical to creating the correct balance and depth of taste and appearance. As distillers, we give this share of the spirit to the angels. The remainder we here have coined as "The Devil's Due". Beware ye curious fellows - for we call whiskey what it is - something meant to be respected and enjoyed in small drams. It is a peculiar spirit - one that can bring great joy, but without reverence is dangerous.
